As coordinator of the Dietary Manager Program, I have been an adjunct faculty member of the Ankeny Campus since 1987.
I grew up in Alabama. After completing a BS from Auburn Univ. followed a one year's Dietetic Internship at Massachusetts General Hospital (1964) and an MS from Iowa State Univ. (1973).
I have 45 years of practice in dietetics, maintaining membership and registration with the Academy of Nutrition and Dietetics (formerly American Dietetic Association) and Licensure in the State of Iowa.
The Dietary Manager Program is a part-time credit training program. Our non-traditional schedule is designed for working adults. Classes meet on Tuesdays only and take two semesters to complete the Specialist Certificate.
The Program is approved by the Association of Nutrition and Foodservice Professionals (formerly Dietary Managers Association) and meets minimum requirements for Healthcare Facilities Food Service Supervisors (formerly 90 hrs).
